How do we make sure we provide top quality cherries?

Over 100 varieties of cherries exist on the market today and each variety has quality indicators that we look for. In general, we make sure the skin is firm and shiny (no soft spots, wrinkles or splitting). We also place a lot of emphasis on cherries with a green stem; the freshness of the cherry can be well gauged by the quality of the stem. We avoid immature cherries (which lack flavour and juice) by making sure we don’t supply cherries that are dull and pale. We also check to make sure there are no signs of early mould or decay, and no bird damage. Finally, we check for a sweet aroma, which is one of the best indicators that the cherries are fresh and ready to eat.

Where do we source our cherries from?

We try to source locally because cherries do not ripen after picking, so they’re sweetest if left on the tree until ripe. Also, the less travelling the better – small distances reduce the likelihood of handling injury.


When local supply is available, we choose to source from growers around the Bacchus Marsh area. If not, we source our supplies from the Seville, Wandin Valley, and Lilydale areas. Cherries have a fairly high chilling requirement (ie cold winters), and well-draining soil; these regions satisfy these requirements well.

What is the best way to keep cherries?

Cherries store best in an airtight container in the fridge (optimal storage conditions are at 0°C and 90%-100% relative humidity.

Cherries are a great source of vitamin C and a solid source of dietary fibre and potassium.

Cherry seasonal information

Cherries are usually available between October and February. Supply usually peaks between November and December.

Cherry serving tips and suggestions

When cooking, you can remove the stems easily with a cherry stoner. For longer storage, you can try freezing them. Frozen cherries are also a refreshing summer treat!
