Potatoes - Sweet (Red Variety)

Rich in vitamins C & E and packed full of other nutrients, sweet potatoes are one of the most nutritious vegetables! Their distinctively sweet taste is the result of a special enzyme that converts most of its starches into sugars.

How do we make sure we provide top quality sweet potatoes?

We make sure the sweet potato has a firm, dark and smooth skin.  We also make sure the sweet potato is not bruised, cracked or soft. Finally, we check for a strong red colour (the red colour is an indication of the level of carotenoids in the sweet potato, which is a source of vitamin A).

Where do we source our sweet potatoes from?

Sweet potatoes grow best in warm and humid conditions, where there is fertile and well-drained soil. We source most of our sweet potatoes from growers either in Queensland (the Atherton Tablelands and Lockyer Valley regions) or the Northern Territory (around Darwin).

What is the best way to keep sweet potatoes?

Sweet potatoes are best stored in a cool, dry environment (about 15°C and 85%-95% relative humidity). Don’t store in the fridge, they tend to develop a hard and unpleasant core. Try not to store them under temperatures of about 12.5°C, sweet potatoes are very sensitive to chilling injury, which affects their texture and flavour.

Sweet potatoes nutritional information

Sweet potatoes are one of the most nutrient rich vegetables. They are rich in vitamin C and E (both of which are antioxidants and helpful in the prevention of heart disease and some cancers). They are also a good source of complex carbohydrates, protein, fibre, calcium, folic acid, magnesium and potassium. Eat them with the skin on; most of the nutrients are located just below the surface.

If baking, you can keep the skins soft and moist by wrapping them in aluminum foil with the shiny side on the inside.
