How do we make sure we provide top quality custard apples?

A custard apple, as with the avocado, is ripe when it gives to slight pressure from your hand. Shape isn’t really an indicator of quality – the custard apple’s shape varies from tree to tree and can be anything from heart-shaped to round. We look for evenly coloured fruit, which can also have brown tinged ridges. We reject any fruit that appears black, pulpy or aged.

Where do we source our custard apples from?

Custard apples require tropical to sub-tropical growing conditions. Originating in Peru, these days they are grown in the South-East or Tropical North areas of Queensland (depending on the season), and occasionally from the New South Wales North Coast. Only a small amount of the flowers on the tree will bear fruit, which takes between 20-25 weeks to reach maturity. Generally, greater humidity adds to the success of the pollination.

What is the best way to keep custard apples?

Custard apples ripen best at room temperature. For longer storage, they are best kept in the refrigerator (optimal long storage conditions are at 7°C-10°C and 90%-98% relative humidity). Unripe custard apples will ripen within a week of purchase, however you can quicken the ripening process by placing it a brown paper bag with a banana.

Custard apples are a good source of dietary fibre and vitamin C. They are also a handy source of vitamin B2, vitamin B6, magnesium, potassium and complex carbohydrates.

Custard apples are available from March and supply peaks in about May. They are usually available until September.

Custard apples can only be eaten when fully ripe. When cut, they should be moist with a pleasant sweet aroma. Scoop out and enjoy the delicious flesh. Custard apples can make an interesting addition to a fruit salad or turned into a fruit sorbet, added to a cake filling or even turned into chutney.
